If there are some server-like features that you want during
installation on your desktop machine, like LVM partitioning, then you
should try the alternate CD. To get the alternate CD from ubuntu.com,
you have to check a box down below the "Start Download" button.

But Jeremy is right, if you install the desktop version, you could add
any server software you wanted to later.
